Roasted zucchini is the perfect side dish for almost any meal! Fresh zucchini is tossed with olive oil and topped with a pinch of parmesan cheese.
- 4 small zucchini – ends trimmed
- 1/3 cup freshly grated Parmesan
- 1 teaspoon Italian seasoning
- 1/2 teaspoon kosher salt
- 1 tablespoon freshly squeezed lemon juice
- 1/4 teaspoon black pepper
- 1 1/2 tablespoons extra virgin olive oil
1.Preheat the oven to 400 degrees F. Coat a cooling rack with nonstick spray and place on a rimmed baking sheet.
In a small bowl, stir collectively the Parmesan, Italian seasoning, salt, and pepper.
2.Place the zucchini in a big bowl. Drizzle with the oil and sprinkle with the Parmesan combination. Toss to coat, then prepare the zucchini on top of the cooling rack on the ready baking sheet, being careful to not overlap the spears.
3.Place within the oven and bake till the zucchini is tender, about 12 to 15 minutes. Turn the oven to broil. Cook till the Parmesan is a litle crisp on top, about 2 to three minutes.
4.Take away the zucchini from the oven and immediately squeeze the lemon juice over the top.
